
MicroGreen Quiche

INGREDIENTS
1 pie crust (refrigerated)
6 large eggs
3/4 cup half and half
1 tsp salt
1/4 tsp black pepper
1 1/2 cups cooked ham (chopped)
1/2 Cup Microgreens (we used arugula and broccoli)
1/4 cup bell pepper (chopped)
1/4 cup onion (chopped)
1 cup cheddar cheese (shredded
DIRECTIONS
Pre heat oven to 375F
Put pie crust into a pie pan, add foil and weights to top of pie crust (dried beans or rice both work if you dont have pie weights) this will let the pie crust to pre cook so it doesnt get soggy. Pre bake for 10 minutes.
In a large bowl mix together eggs, half and half, salt, and pepper.
Once mixed add chopped ham, microgreens, bell pepper, onion, and cheddar cheese into the egg mixture.
Remove weights from pie crust and poor in your egg mixture place back into the oven for 30 minutes or until the egg miture is set.
Remove from oven allow to cool for 5-10 minutes before serving.
